Plain Rice
(makes 6 cups)
3 C short-grain white rice
3 1/2 C water
Place rice in colander and place in bowl
of water; wash rice by briskly stirring with
hand. As water becomes cloudy, empty bowl
and refill with fresh water; repeat until
water runs almost clear.
Let rice drain in colander for 30 minutes.
Put rice and water in deep heavy pot, cover
and let sit for 30 minutes.
Cook over medium heat until water boils;
reduce heat and simmer for 10 minutes.
Cook rice over low heat for another 10-12
minutes; remove pot from heat and let sit
for 10-15 minutes. Keep covered.
Fluff rice with damp wooden paddle; drape
kitchen towel over pot and cover with pot
lid until serving.
Hints:
* A 7-8 inch pot (12-18 cm) with tight fitting
lid is about right for this recipe.
* Rice cookers automatically adjust the heat
and indicate proper amount of water for cooking.
* Some varieties of rice do not require
washing.
