Directions

  1. Place the shelled oysters into a sieve, and rinse by shaking the sieve in salted (extra) water, then drain.
  2. Cut the bacon slices into 5 cm (2 in.) widths and the onion into thin slices. Separate the shimeji and enoki mushrooms into individual stems, and thinly slice-up the button mushrooms.
  3. Melt the 2 Tbsp of butter in a fry pan, saute the onions and bacon, add in the shimeji, enoki and button mushrooms, once softened add in (1) and (A), then braise the ingredients.
  4. Coat an oven-safe dish with a small amount of butter (extra), add in (3) and pour on the heavy cream. Next, sprinkle on the shredded cheese.
  5. Place in an oven preheated to 200 C (430 F) and bake for 5 to 6 minutes. Sprinkle on the minced parsley and serve.

Cooking Basics

Oysters - cleaning

Place the oysters into a strainer, then place into 3% salt water and lightly stir with your hands. Clean by shaking the bowl back and forth. By doing so not only sand, but any sliminess and strong odor will also be removed. After cleaning, use paper towels to thoroughly remove any remaining moisture.

Shimeji mushrooms - cutting off the hard base

Many of the shimeji mushrooms available in stores have been cultivated in mushroom beds, causing the roots to be tighly squeezed together. To some the chaff is attached, so be sure to cut away this hard base before using.

Enoki mushrooms - removing the hard base

Taking out from the package before removing the hard base will result in the hard base falling apart all over the place. Cutting off the hard base while its still in the package is less messy and recommended. After doing so, take the part for use out of the remaining package. Some packages available on the market have a cutting line conveniently indicated on the package.
