Directions

  1. Prepare the beef by rubbing with (A).
  2. Cut the eggplant into 2 cm (1 in.) squares.
  3. Cut the bell peppers to about the same size.
  4. Heat 1 tbsp of salad oil in a frying pan, then add the eggplants and bell peppers. Cook for 3-4 minutes, then set aside.
  5. In the same pan, heat 1 tsp of salad and sesame oil and cook the beef, garlic and ginger together.
  6. Add the bell peppers (3) and (4) together with the dissolved starch, and stir-fry everything together.

Cooking Basics

Garlic - mincing

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.


Ginger - mincing

Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
