Directions

  1. Crush the garlic with a knife. Cut the red chili peppers in half and remove the seeds.
  2. Cover the chicken with the soy sauce. Place the bread flour, pepper and chicken into a storage-use plastic bag, remove any air and tightly seal off. Shake the plastic bag to thoroughly coat the chicken in flour.
  3. Heat the olive oil, (1) and the bay leaves in a fry pan over medium heat. Once the olive oil is well-infused with aroma and flavor, arrange the chicken in the fry pan and cook. When the oil starts to sizzle, flip each wing over and cook the other side to crispy golden as well. Serve onto plates with a side of lemon.

Garlic - crushing

Peel the thin skin, then cut into half vertically. Place the cut side down to prevent the garlic from moving around during cutting. Place a flat object on top and press down to crush. The flatside of a knifeblade can also be used, however a wooden spatula is safer as it is less likely to slip during crushing.
