300 g (10.6 oz)

Directions

  1. Dice the onion, place in a lidded heat-safe container, add the vegetable oil and mix together. Cover with the lid and microwave on high for 2 minutes, then set aside to cool. Dice up the dried apricots.
  2. Combine all ingredients from (A) in a bowl, mix thoroughly and then spread out evenly into a casserole dish.
  3. Beat the eggs in a bowl, add the milk and salt then mix until light foam begins to form. Pour over the meat mixture from step (2).
  4. Sprinkle the sliced almonds over the meatloaf and then place the bay leaves on top.
  5. Preheat an oven to 180°C (356°F), place the dish into the oven and bake for 30 minutes. (When the top of the meatloaf is sufficiently browned, cover with aluminum foil and bake for the remainder of set time.)
