80 ml (1/4 C)

400 ml (1 3/4 C)

Directions

  1. Thinly slice gobo, chop eggplant, and deep-fry both.
  2. Mix (A) to create soup base, and cool.
  3. Boil somen, and then soak in cold water. Serve in bowls, and pour on (2). Top with (1), and garnish with thinly sliced green onion and grated ginger root to taste.

    * If available, use young burdock root.
