Directions

  1. For the eggs, separate the whites from the yolks. Julienne the yam into 5 cm (2 in.) long slices.
  2. Place the egg whites into a bowl and whip until a meringue forming stiff peaks.
  3. Boil the soba noodles and then place in cold water. Drain and serve in bowls.
  4. Pour (A) onto (3), arrange the yam and (2) on top, then place the egg yolk top and center. Sprinkle on cayenne pepper powder if desired.
