Simmered Pork and Asparagus with Ground Sesame Seeds

100 ml (3.4 fl. oz.)

Directions

  1. Chop the pork into easy to eat lengths. Thinly slice up the yam cake into 3 cm (1.2 in.) squares and parboil.
  2. Cut the green asparagus up into 5 cm (2 in.) lengths.
  3. Heat the olive oil in a pot, and saute (1). Once the meat is browned add in (A).
  4. Once boiling, remove any scum that forms, add in (2) and half of the sesame seeds and then cover with a lid. Simmer for 10 to 15 minutes until the cooking liquids are boiled down to about half.
  5. Serve onto dishes and sprinkle on the remaining sesame seeds.

Yam cake - parboiling

If you quickly place the yam cake into boiling water (parboil) the distinct odor of the yam cake will be removed, flavor and seasonings will be soaked up easier, and the rubbery texture will be refreshed. The appropriate boiling time is for 2 to 3 minutes in water that is at a rolling boil. Avoid over-boiling as this will result in hard yam cake.
