Directions

  1. Remove the roots from the soybean sprouts, then lightly boil them in salted boiling water.
  2. Julienne the shiitake mushrooms and carrot.
  3. Chop the garlic chives to about the same length as the shiitake mushrooms and carrots (2).
  4. Cut the long onion to about the same length as (2), then quarter (2), (3) and the long onions lengthwise.
  5. Heat up a pot and oil it with the sesame oil.  Saute (2), then add (1) and stir-fry together.
  6. Add and coat with (A).  Add (3) and (4), quickly stir-fry together, then serve sprinkled with ground sesame seeds on plates.

Carrots - matchstick juliennes

Cut a peeled carrot into 4 to 5 cm (about 2 in.) pieces lengthwise, and slice each piece into 3 mm (0.1 in.) wide planks, gradually sliding and stacking the slices. Lastly julienne these into 3 mm (0.1 in.) width thin sticks.
