Julienne the potatoes using a slicer or a knife, place into cold water and then drain.

Cut the bacon into 5 to 7 mm (about 1/4 in.) widths.

Melt the butter in a fry pan. Stir-fry the potatoes until translucent, then add in (2) and stir-fry further. Sprinkle the curry powder, soy sauce and mirin into the pan and stir-fry all the ingredients together.
