Peel the potatoes, then chop into bite-size pieces and rinse in water.
Place in a pot with enough water to cover them.
Heat lidded until it comes to a boil, then cook over low heat for 10 minutes. -
Once the potatoes are soft, add and boil the pork.
Place everything in a colander and drain. -
Return the pork and potatoes to the pot with (A).
Cook over medium heat while stirring until the liquid is reduced.
