With its vivid green color and mild, delicate flavor, bok choy is a popular Chinese vegetable. Although rich in carotenes, vitamin C and potassium, bok choy has an especially high content of carotenes.

Storage

Select bok choy with wide leaves, a nice sheen overall and thick, crisp stems. Wrap in storage-use plastic wrap and store in a refrigerator.

Cooking Tips

Recommended for use in simmered dishes, sauce-dressed dishes, stir-fries and soups.
