Eating Grilled Fish

Grilled fish is a common dish found on the Japanese table: simple yet delicious. For many, though, eating fish properly may seem to be a challenge, especially as the fish is prepared with tail and head intact. The following are easy suggestions for eating and enjoying grilled horse mackerel the Japanese way.

  1. First, eat the meat and skin* from the upper body of the fish, taking care not to consume any bones**. The head is not eaten. (photo1)
  2. After finishing the upper meat, slide chopsticks between the spine and the lower meat and lift away the spine***. (photo2)
  3. Eat the meat from the underside. (photo3)
  4. Leave all bones and the head in one neat pile on the plate. (photo4)

* The skin of grilled fish is crispy and delicious. It is quite edible.
** Small bones may enter the mouth; feel free to remove any of these bones with your fingers.
*** If bones don't lift easily, hold the head and try again.
