Green Beans with Sesame Dressing
Japanese aemono comprise a variety of side dishes that are mixed with dressings or sauces and served as cool salads. This traditional recipe combines fresh green beans with a tasty sesame dressing.

Ingen no goma-ae
- Boil the beans in lightly salted water for 3 to 5 minutes until tender but firm. Drain and allow to cool in a colander. Cut each bean into 2 or 3 slices and transfer to a bowl. Combine soy sauce and dashi; mix well with the beans. (photo

- Stir together the dressing ingredients until smooth. (photo

* | If desired, 1/2t ground sesame seeds may be added to enhance texture and flavor. If using toasted sesame seeds instead of paste, grind 2T seeds into a smooth paste. |
