Directions

  1. Trim the asparagus by removing their hard bases and cut each stalk into 6 cm (roughly 3 in.) pieces.
  2. Heat the salad and sesame oil in a pan and stir-fry the asparagus with the ginger until tender.
  3. Add the orange peel, soy sauce and pine nuts to finish and serve.

Cooking Basics

Green asparagus - peeling off the outer skin

The skin from the root to about 1/3 to 1/2 way up the asparagus spear is hard, so use a peeler to remove this. Use a peeler rather than a knife to achieve thin and even peeling.

Ginger - mincing

Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
