Fried Noodles (Yakisoba)

Originally based on a Chinese dish, yakisoba is extremely popular in Japan and available in your local convenience store. The following is a standard recipe.

300 g (10 oz.)

80 g (3 oz.)

1 leaf

20 g (1 oz.)

1/4 bulb

40 g (1-1/2 oz.)

3/4 Tbsp

(A)Sauce

1 tsp

3 tbsp

Directions

  1. Cut the pork into bite-size pieces.
  2. Finely chop the cabbage and onion, and cut the carrot into thin slices.
  3. Heat up the salad oil in a frying pan, then add the pork and saute until its color changes; then add, in order, the carrots, onions, cabbage and bean sprouts.  Add the noodles and stir to untangle.
  4. Mix in (A) and cook until the sauce is thoroughly mixed.
  5. Serve (4) on two dishes with, as desired, nori flakes and pickled ginger.

Cooking Basics

Carrots - julienned

Cut into 4 to 5 cm (about 2 in.) lengths and peel each piece. It will be safer and easier to cut if the edge is thinly sliced off to create a flat surface and this cut surface is placed face down. Slice into 1 to 2 mm (0.5 in.) thick planks, stack by sliding these gradually, and then thinly julienne from end to end.
