Directions

  1. Dip the mushroom in hot water to rehydrate, remove the hard stem, and tear into edible-size pieces. Clean the shrimps in salted water then remove any veins. Slice the octopus into chunks diagonally. Roughly chop up the cabbage and remove the stems and fibrous strings from the snow peas. Finely chop the garlic.
  2. Heat 1/2 Tbsp of vegetable oil in a wok and saute the cabbage, snow peas and mushroom pieces until they become vibrant in color. Remove and set aside on a plate or tray.
  3. Add an additional 1/2 Tbsp of vegetable oil to the wok and slowly saute the garlic over low heat. Once fragrant, add in and saute the shrimp and octopus. When the shrimps begin to change color, break apart and stir in the noodles.
  4. Return (2) again, then thoroughly mix in the spices and sauce from (A). Lastly, add the soy sauce from the edge of the wok in a circular fashion and season with salt and pepper.

Cooking Basics

Shrimp - deveining

Shrimp or prawns have a dark-colored intestinal tract (often called a vein) running down the length of their back, this needs to be removed. For shrimps in shells, before removing the shell, place a toothpick into the 2nd to 3rd abdominal segment from the head and gently remove this. By slightly bending the back this process is made easier. For headless shrimp, quite often the intestinal tract has been removed with the head.

Shrimp - peeling

When deep-frying shrimp or prawns, quite often the tail is left and only the shell is removed. Peel the shell off from the head while making sure that the last abdominal segment to which the tail is attached remains intact. When the shell is peeled off, the legs will also be removed.

Cabbage - roughly chopped

Separate the leaves, place the knife diagonally along the core to remove. Cut the leaves in half lengthwise, stack, and then cut into 3 - 4 cm (1.2 to 1.6 in.) wide strips.

Snow peas - removing stems and strings

Fold the stem over towards the straighter side of the snow pea and then pull this off along the length of this straighter side to remove the stem and string.
