Directions

  1. Grate ginger, dice Japanese long onion, then combine in a bowl with ground chicken, egg and salt. Mix thoroughly.
  2. Form meat mixture into four patties. Heat sesame oil in a pan and fry.
  3. When both sides of patties are browned, add sake, cover and continue to fry. When patties are cooked through, add in ingredients from (A) and bring to a boil.
  4. Serve patties along with side vegetables. Add a 1/3 cup of water to remaining sauce in pan and bring to a boil. Dissolve starch powder in 2 Tbsp of cold water and add to sauce. When sauce thickens, pour over patties.

Cooking Basics

Japanese long onion - finely chopped

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.


Cabbage - julienned

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
