Directions

  1. Remove pork sinews, and salt and pepper.
  2. Break apart eringi mushrooms into 4-6 portions by hand. Divide shimeji mushrooms into individual mushrooms.
  3. Heat olive oil in frypan, and add (1) to pan. Brown both sides, add (2) and saute. Lightly salt and pepper, then add tomato sauce and cook for 10 minutes. Adjust flavor with salt and pepper. Serve with basil and other garnish if available.
