Sautéed Chicken and Snow Peas with Garlic

50 g (about 1-3/4 oz.)

Directions

  1. Cut the chicken in to bite-size pieces and massage with the soy sauce and sake from (A).  Then coat with the starch and sprinkle with the olive oil from (A).
  2. Remove the strings from the snow peas.  Cut off the shiitake mushroom bases and thinly slice.
  3. Place the olive oil and garlic in a frying pan and cook until fragrant.  Then remove the garlic.
  4. Add (1) to the same frying pan and cook the meat until its edges change color.  Then add (2), the anchovies and 1 Tbsp of water and stir-fry until the liquid has completely reduced.
  5. Serve the fritters on dishes topped with the garlic (3).

Cooking Basics

Snow peas - removing stems and strings

Fold the stem over towards the straighter side of the snow pea and then pull this off along the length of this straighter side to remove the stem and string.

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.
