(A)Sushi Vinegar

1 & 1/2 Tbsp

Directions

  1. Place the mirin from (A) into a heat-resistant container, and head uncovered in a microwave (600 W) for 20 seconds, then mix with the remaining ingredients from (A).
  2. Mix (1) quickly into the cooked rice, and allow to cool to body temperature (between 35-40 C / 95-104 F).
  3. Cut-out the ham and cheese slices into desired shapes, slice up remainder of these slices and mix into (2).
  4. Quarter the cherry tomatoes, julienne the green perilla (shiso), and wipe away any remaining moisture.
  5. Arrange the sushi rice on a plate, and dress with the ham, cheese and ingredients from (4).
