Directions

  1. Place ingredients from (A), excluding the long onion, into a bowl and knead together by hand. Then add in the long onion and mix together further.
  2. Halve the quail eggs.
  3. Lay a dumpling wrapper flat on a cutting board, while leaving about 1 cm (0.4 in.) space around the edges, place 1/12 of the filling on top. Place a shrimp in the center, use your finger to wet the edge of the dumpling wrapper and place a separate dumpling wrapper on top. Use a fork to mash together and close the edges of the dumpling wrappers. Repeat this process by rotating the ingredients of shrimp, quail egg and cheese to prepare 4 types of dumplings.
  4. Lastly fry the dumplings (3) to crispy golden brown and serve onto plates.

Cooking Basics

Japanese long onion - finely chopped

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.


Ginger - mincing

Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
