  1. Cut onion and chicken into 1 cm (1/2 in.) cubes.
  2. Heat pan and melt 2 Tbsp of butter. Saute (1), and when cooked through, add drained mushrooms and (A), and combine.
  3. Add 500 g (17.5 oz.) of rice and saute further.
  4. To make white sauce (B), put pot on low heat and melt butter. Sprinkle in flour, and continue to stir so that it does not burn. When flour becomes sticky, heat until it becomes dry. Add all of milk at once, and dissolve. Add bay leaf, salt and pepper. Cook and continue to stir until thick.
  5. Coat baking dish with some butter, then spread (3) evenly in dish and pour on plenty of white sauce. Scatter 2 Tbsp of butter on top.
  6. Bake in oven on high heat (230-240 C (440-460 F)) until browned for 12-13 minutes.
