Kuku Choma (East African Marinated Chicken)

A barbequed chicken dish popular in Kenya. The characteristic sauce prepared from rosemary, lemon juice, red chili peppers and soy sauce is delectable. Once marinated, all that is left to do is cook!

bone-in chicken

600 g (21.2 oz.)

rosemary (garnish, optional)

as desired

(A)Marinade

olive oil

2 Tbsp

squeezed lemon

1 & 1/2 (3 Tbsp)

minced garlic

2 cloves

minced ginger

1 knob

black pepper

1.5 g (0.05 oz.)

dried red chili peppers (minced)

1 to 2

dried rosemary

1 Tbsp

Directions

  1. Mix (A) together in a bowl. Add in the chicken and combine all ingredients, then cover with a lid and place into a refrigerator for more than 2 hours.  
  2. Place the chicken into a fry pan or onto a grill pan and roast until cooked through and golden brown on both sides. Halfway through cooking use a basting brush to coat the meat with the marinade. Serve onto plates and garnish with rosemary if desired.
