Directions

  1. Peel the pumpkin in various places, then divide into 4 pieces. Place into a lidded heat-safe container and microwave for 5 to 6 minutes at 600 W. Allow to cool, then quickly mash up and set aside to cool further.
  2. Cut the cream cheese into small cubes.
  3. Loosely mix together (1), (2) and (A), then serve on plates lined with lettuce.
