Directions

  1. Wash ginger and slice it thinly with skin on and cut welsh onion (negi) into chunks.
  2. Put chicken in pot, add water until covered and place over high heat. When water boils, remove from heat and pour out water. Quickly rinse chicken with cold water.
  3. Put ginger, negi and chicken in a pot and add 2 liters of water. Add the ingredients of (A) and place over high heat. When water boils put pot over low heat and simmer for one hour. Remove lye as it collects on the surface of the broth.
  4. Remove ginger, negi and chicken from pot. Remove bones from chicken and return chicken meat to pot. Check the flavor and add salt as needed. Serve. Add black pepper to taste.
