New Cookbook Contents: “Washoku Lesson”
A Clear and Comprehensive Introduction to Recipes and More for Washoku, Japan’s Traditional Food Culture

This year the Kikkoman Corporation unveiled “Washoku Lesson”, new contents introducing Japan’s traditional food culture, on its recipe page “Global Cookbook”, accessible from the Kikkoman global website. “Washoku Lesson” provides a clear and comprehensive introduction of featured content, including classic washoku recipes using soy sauce, specialized Japanese culinary tools, and even new ways to enjoy dishes, for people worldwide.
Currently the site features 4 recipes for “Beef Udon”, “Chirashi Sushi”, “Tamagoyaki” and “Tempura”. Each recipe includes detailed step-by-step explanations of the preparation process, cooking tips and videos geared at first-time washoku chefs as well. In addition, find highly practical suggestions and alternative options for seasonings and culinary tools to make these recipes even easier to challenge for those living outside of Japan. Furthermore, other related and original content, such as in-depth explanations of Japanese ingredients and culinary tools, as well as unique new takes on recipes to fuse diverse cultural flavor preferences are presented. Contents featured here will be regularly updated to offer an extensive range of main and side dishes recipes.




Washoku, the traditional food culture of Japan, has been handed down over many generations throughout its long history. In recent years, washoku has been receiving global attention as it offers a rich variety of dishes that are not only delicious, but also have good nutritional balance, a beautiful appearance, and incorporate seasonal ingredients. Also, in Japan it is customary etiquette to place your hands together in a prayer position and say “Itadakimasu (I humbly receive)” before, and “Gochisousama (it was a feast)” after, each meal. These phrases hold the meaning of expressing gratitude to nature for its blessings of the food, and to all the people involved in all processes until the food became a meal, and are highly symbolic of Japanese food culture.
