250 ml (8.5 fl. oz.)

  1. Boil the spinach is salt-added (a small amount, extra) water, squeeze out excess moisture and chop into 4 to 5 cm (1.5 to 2 in.) lengths.
  2. Melt the butter from (A) in a heavy-bottomed pot, sprinkle in the flour and warm over low heat. Add in the soymilk a little at a time to prepare a smooth sauce, then adjust the flavor with the soy sauce, salt and pepper.
  3. Lightly butter an oven-safe dish, add in (1), pour on (2), sprinkle on the cheese and bake in an oven toaster for 4 to 5 minutes.
