Directions

  1. Lightly slice a lattice design into the surface of the squid, cut into 2 cm (0.8 in.) squares and season with (A).
  2. Break apart the broccoli, boil in lightly salted water, drain and dry.
  3. Lightly heat the sesame oil in a fry pan and saute the garlic. Once fragrant, turn the heat to high and stir fry the squid. After a short while, add in the broccoli and sake, then use a circular motion to add in the soy sauce and give all ingredients a final stir to mix the seasonings throughout before turning off the heat.

Garlic - mincing

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
