Directions

  1. Cut the chicken liver into bite-size pieces. Remove the bitter green portion, blood and clumps of fat, wash and drain.
  2. Boil the oyster sauce in a pot, allow to simmer a few minutes and then add the sake and (1), simmer for 3 to 4 minutes until boiled down to 70 to 80%.
  3. Stop the heat for a moment and remove the liver while allowing the sauce to drip off.
  4. Simmer the sauce, and return the liver once the sauce has almost been entirely boiled off, simmer together making sure the liver is cooked through. Turn off the heat, add the soy sauce making sure each piece is covered with the sauce mixture.

    • As this ingredient burns easily when cooked in small amounts, preparing a serving for 4 is recommended. This dish be kept in a refrigerator for up to one week.
