Trim off any remaining fat or blood vessels from the liver, cut into easy to eat pieces, rinse off, then soak in (A) to season.

Finely grate the ginger and garlic. Diagonally slice the Japanese long onion into 1 cm (0.4 in.) widths.

Heat the vegetable oil in a fry pan, and saute the potato starch-dusted liver with the garlic and ginger. Pour in (B) and bring to a boil.

Add in the Japanese long onion (3), coat with the cooking liquid and pour in the sesame oil to complete.
