Main Dish: Pork Piccata
pork tenderloin – 4 slices (100 g / 3.5 oz.)
flour – as needed
egg – 1
grated parmesan cheese – 2 Tbsp (10 g / 0.4 oz.)
salt – 1/4 tsp
pepper – a pinch
cooking oil – 1/2 Tbsp
Side Dish 1: Asparagus and Cauliflower Sauteed in Butter and Soy Sauce
green asparagus – 1 stalk (18 g / 0.6 oz.)
cauliflower – 3 florets (40 g / 1.4 oz.)
olive oil – 1 tsp
butter – 5 g (0.2 oz.)
Kikkoman Soy Sauce – 1 tsp
Side Dish 2: Marinated Bell Peppers
red bell pepper – 1/4 piece (40 g / 1.4 oz.)
vinegar – 1/2 tsp
salt and pepper – a pinch of each
smoked paprika powder – a pinch
To Serve
cooked rice – 150 g (5.3 oz.)
baby leaf lettuce mixes – 15 g (0.5 oz.)
oil-marinated dried tomatoes – 2

Step-by-Step Instructions
Prepare the Bento Dishes

- 1Peel the lower half of the asparagus stalks, then slice them diagonally into 2 cm (0.8 in.) pieces.

- 2Cut the bell pepper into bite-sized pieces.

- 3Cut the pork into four equal pieces. Season both sides with 1/4 tsp salt and a little pepper.

- 4Heat olive oil in a fry pan over medium heat. Add the cauliflower and asparagus and cook for about 1 minute. Add butter and 1 tsp Kikkoman Soy Sauce, mix to coat, then remove and let cool.

- 5In a bowl, beat the egg with 2 Tbsp Parmesan cheese. Coat the pork from step 3 lightly with flour, then dip it into the egg mixture.

- 6Heat oil in the fry pan over medium heat, then place the bell pepper on one side of the pan and the pork on the other. Cook for about 2 minutes. Once the bell pepper is cooked through, transfer it to a bowl to cool.

- 7Flip the pork slices over and pour the remaining egg mixture underneath. Cook for 2 minutes, then remove and let cool.

- 8To the bowl with the cooked bell pepper, add 1/2 tsp vinegar, salt and pepper, and smoked paprika powder, then mix.
Pack the Bento

- 1Fill half of the bento box with rice and let it cool.

- 2Place a layer of baby leaf lettuce mixes between the rice and the rest of the box.

- 3Fill half of the remaining space with the pork piccata.

- 4Add the asparagus and cauliflower sauteed in butter and soy sauce.

- 5Add the marinated bell peppers.

- 6Top the rice with oil-marinated dried tomatoes.
