Directions

  1. Thaw the frozen pie sheet at room temperature, spread this into a pie dish lightly buttered and floured (butter and flour not included in recipe ingredients), cut away any extra around the dish edge, lay down aluminum foil on top of the pie sheet and fill the dish with rice or beans or some other suitable weight, bake in a 250°C (about 480 °F) oven for 5 minutes, turn the temperature down to 200°C (about 390 °F) and bake for 10 minutes, then allow to cool.
  2. Mix together (B) and allow to thicken.
  3. Place (A) in a bowl and mix to blend together, once the mixture becomes white in color place over a warm water bath and mix for a further 2 minutes.
  4. Melt (2) over a warm water bath, add in (3) and mix all together.
  5. In a separate bowl whip the egg white, add in the granulated sugar and mix further until peaks can be formed.
  6. Mix the cream cheese until it becomes soft and smooth, add in (4) and (5) in order, pour into (1) and allow to set and harden in a refrigerator.
  7. Drain the pears, slice these into thin wedges, arrange these onto (6), spread on (C) and garnish with mint leaves if on hand.
