shelled crab (broken apart)

50 g (1.8 oz.)

3 cm (1.2 in.) portion

a dash

100 ml (3.4 fl. oz.)

(B) Potato Starch Solution

2 tsp

Directions

  1. Beat the eggs, add in the crab, green onions and pepper and mix all together.
  2. Heat the oil in a fry pan, pour in (1) and cook to soft-scrambled over high heat. Divide into four, flip each portion to cook the other side and then serve onto plates.
  3. Bring (A) to a simmer in a small pot, then add (B) to thicken. Bring the mixture to a quick boil, then pour onto (2).

Cooking Basics

Japanese long onion - finely chopped

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.
