Directions

Boil the spinach in lightly salted (extra) water. Drain and squeeze to remove excess water, then cut into 4 to 5 cm (2 in.) lengths.
- 
Melt the butter from (A) in a heavy pan, sprinkle the flour onto the melted butter and mix together over low heat. Stir in the original soymilk a little at a time until the sauce is creamy. Season with soy sauce, salt and pepper.
- 
Place the spinach in an oven-safe dish lightly coated with butter, top with the white sauce (2) and cheese. Bake in a toaster oven for 4 to 5 minutes.
