Spinach and cheese with white sauce made from soymilk.

30 g (1.1 oz.)

(A) White Sauce

10 g (0.4 oz.)


250ml (8.5 fl. oz.)

1/3 tsp

  1. Boil the spinach in lightly salted (extra) water. Drain and squeeze to remove excess water, then cut into 4 to 5 cm (2 in.) lengths.
  2. Melt butter from (A) in a heavy pan, sprinkle flour onto the melted butter and mix together over low heat. Stir in the original soymilk a little at a time until sauce is creamy. Season with soy sauce, salt and pepper.
  3. Place spinach in an oven-safe dish lightly coated with butter, top with the white sauce (2) and cheese. Bake in a toaster oven for 4 to 5 minutes.
