Cut the spinach into 3 cm (1 in.) lengths.

Cut the red bell pepper into wedges.

Place (1) and (2) into a lidded microwave-safe container and heat for 2 minutes at (600W), remove and soak in water. Once cooled, drain and squeeze out excess moisture.

Pour (A) into (3) and mix together well to dress all ingredients.

Cut the bell pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.
