Directions

  1. Wrap the tofu in paper towel and place on a tray or other suitable surface. Place a weight of 500 to 1000 g (17.7 to 35.3 oz.) on top and set aside for about 30 minutes to thoroughly press out excess moisture.
  2. Cut the tofu up into easy-to-eat cubes and cover these entire surfaces with flour.
  3. Heat the deep-frying oil to 180 C (356 F) and place the tofu cubes inside, deep-fry for 4 to 5 minutes until crispy and golden. Remove from the oil and drizzle on soy sauce before enjoying hot.

Wrap tofu in paper towel and set aside for 15 to 20 minutes. This method works best if the tofu is cut into the desired sized pieces beforehand to remove excess moisture.  
Or wrap tofu in paper towel, place on a tray or other suitable surface and place a weight of 500~1000 g (17.7~35.3 oz.) on top and set aside for about appropriate minutes to release as much moisture as possible.
