Wrap the tofu in paper towel. Place a plate or other item on top as a weight, allow excess moisture to be absorbed, then quarter and lightly dust with flour. Break the shimeji mushrooms apart into small bunches.

Heat 1 Tbsp of oil in a fry pan over medium heat. While cooking both sides of the tofu to golden brown, add 1/2 Tbsp of the oil into an open space and cook the shimeji mushrooms. Once cooked through, add in (A) and spread throughout all ingredients.

Serve onto plates and sprinkle on finely chopped green onions for flavor and color.

Wrap tofu in paper towel and set aside for 15 to 20 minutes. This method works best if the tofu is cut into the desired sized pieces beforehand to remove excess moisture.
Or wrap tofu in paper towel, place on a tray or other suitable surface and place a weight of 500~1000 g (17.7~35.3 oz.) on top and set aside for about appropriate minutes to release as much moisture as possible.
