Chop the spinach and divide the shimeji mushrooms into individual stems.

Cut the bacon into 1 cm (1/2 in.) wide strips and fry in a pan until crispy.

Heat the butter in a pan, then saute the spinach, adding the salt, white pepper and soy sauce gradually.

Serve (3) on dishes sprinkled with crumbled pieces of the bacon (2).

Shimeji mushrooms - cutting off the hard base
Many of the shimeji mushrooms available in stores have been cultivated in mushroom beds, causing the roots to be tighly squeezed together. To some the chaff is attached, so be sure to cut away this hard base before using.
