Directions

  1. Cut spinach into 3 cm (1 in.) pieces.
  2. Heat oil in a pan, add the spinach and cook, then mix in the soy sauce and remove from heat.
  3. Mix the eggs, milk, salt and pepper in a bowl.
  4. Mix (3) with (2), then separate into two portions.
  5. Add half of the butter to a pan and cook one portion of the egg mixture to form an omelette. Repeat with the second portion.
  6. Place the omelettes on plates and serve with ketchup, if desired.
