lily bulb

1 (70 g / 2.5 oz.)

ground meat

200 g (7.1 oz.)

(A) Sauce

tomato ketchup

Worcestershire-style sauce

Directions

  1. Mince the onion, place into a lidded heat-safe container, add in 1/2 Tbsp of the butter, cover with the lid and heat in a microwave (500W) for 3 minutes. Remove, mix and cover with a lid to steam.
  2. Slice off the lily bulb stem, separate into individual bulbs and rinse well. Shave off any dark spots and halve any large bulbs.
  3. Place the ground meat, (1), the beaten egg, and panko pre-moistened with the milk into a bowl. Season with the salt, pepper and nutmeg, then combine all together until the mixture becomes sticky.
  4. Add and quickly mix in (2), divide into two equal-sized portions and form into oval patties while tapping and making an indent in the middle to remove air.
  5. Melt 1 Tbsp of butter in a fry pan over medium heat, add in and cook the green beans. Season with salt and pepper, then remove from the fry pan.
  6. Add in the oil, heat over medium heat and cook (4). Once browned on both sides, cover with a lid and cook over low-medium heat for 4 to 5 minutes until cooked through.

    • Pierce the patty centers with a toothpick. If no red meat is attached once removed, these are cooked through.
  7. Mix together (A) and add in, allow to boil down for 1 to 2 minutes then coat both sides of the patties.
  8. Serve onto plates, pour on the sauce (7) and garnish with (5) and the watercress.

Onions - finely chopped

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
