Directions

  1. Cut the stem from the shiitake mushrooms. Cut the king oyster mushrooms in half vertically.
  2. Heat up the grill. Grill the mushrooms for 5-6 minutes until browned.
  3. Cut the shiitake mushrooms into 7-8 mm (1/4 in.) thick pieces. Cut the king oyster mushrooms once more in half vertically (quarters).
  4. Break apart the tofu by hand, wrap in a paper towel and set on a dish. Microwave at 600 W for 2-3 minutes in order to dry.
  5. Place (4) in a bowl, pour in (A) and mix well forming the dressing. Dress the mushrooms from (3) and serve.

Cooking Basics

Shiitake mushrooms - removing the stem

The stem can be easily removed by folding it over and pulling it off at the base, where it is attached to the cap. You can also cut it off from under the cap with a knife.

Tofu - draining

Wrap tofu in paper towel and set aside for 15 to 20 minutes. This method works best if the tofu is cut into the desired sized pieces beforehand to remove excess moisture.  
Or wrap tofu in paper towel, place on a tray or other suitable surface and place a weight of 500~1000 g (17.7~35.3 oz.) on top and set aside for about appropriate minutes to release as much moisture as possible.
