What is tobiko?

Tobiko (とびこ in Japanese) is salted flying fish roe. It is characterized by its popping texture and bright orange color. Each egg is approximately 1-2 mm in diameter, which is much smaller in comparison with other varieties of fish eggs. Mainly used as a topping for sushi.

Nutrition facts

Tobiko is high in protein and low in fat, making it a good source of protein that helps maintain muscles and cells. It is also rich in vitamin B12, which promotes blood health and energy metabolism, while helping relieve fatigue. Tobiko also contains small amounts of unsaturated fatty acids such as DHA and EPA, which have a positive effect on cardiovascular health. The red color of tobiko comes from a pigment called astaxanthin, which has antioxidant properties.

Refrigerate and consume quickly, as tobiko is a perishable.
