Cut the tuna into bite-size pieces, massage in (A) and set aside for about 5 minutes.

Combine the black sesame seeds with the panko.

Gently squeeze out excess seasoning liquid from (1), and cover in batter by placing into the flour, (B) and then (2). (* For this small amount, milk is mixed with the flour to replace use of an egg).

Fill a fry pan to 1 cm (0.4 in.) deep of cooking oil, turn the heat to medium and pan-fry (3) until crunchy and golden. Serve with lemon wedges if desired.
