Cut the beef into bite-sized pieces. Massage in (A) and set aside to marinate.

Mix together (B).

Thinly slice the bamboo shoot into 3 to 4 cm (1.5 in.) lengths. Cut the negi into 2 cm (0.8 in.) lengths. Remove the hard core from the cabbage and chop into large bite-sized pieces.

Heat 1 Tbsp of sesame oil in a fry pan and brown the beef. Once the color has completely changed, remove and set aside.

Add the remaining 1/2 Tbsp of sesame oil to the same fry pan and stir fry (3) for 1 to 2 minutes. Add in the cooked beef, pour on (2) and stir fry until all ingredients are cooked through.

Separate the leaves, remove the core, cut the leaves in half lengthwise, and then stack. Cut into 3 cm (1.2 in.) wide strips, then cut into 3 cm (1.2 in.) wide squares.
