Remove scales from the sardines, chop off the heads, remove the innards, rinse out, slice off the tail, and cut into half lengthwise.

Heat (A) in a pot. Add in the ginger, pickled apricots and (1). Cover all ingredients evenly with the cooking liquid, cover the pot and simmer for 15 minutes.

Remove the cover, ladle the cooking liquid onto all ingredients evenly. Continue to simmer until only about 1/3 of the cooking liquid remains, then serve into dishes.
