Use a knife to trim off excess fat from the chicken. Season both surfaces with the soy sauce and pepper, then cover with the oregano.

Cut the garlic in half.

Place the olive oil and garlic into a fry pan and heat. Slowly saute until golden, then remove. Next arrange the chicken skin-side down in the same fry pan. Once browned, flip over, turn the heat to low, and pan-fry for 6 minutes.

Serve on plates, garnished with the garlic, watercress, radishes and lemon wedges.
