Directions

  1. Slice into the thick part of the chicken thigh and cut into easy-to-eat pieces.
  2. Place (1) and (A) into a bowl, massage in and set aside to marinate for 10 minutes.
  3. Cover (2) with the potato starch, then deep-fry in oil heated to 170 to 180°C (338 to 356°F).
  4. Serve (3) onto plates garnished with lettuce and lemon wedges if desired.

Chicken thigh meat - removing sinew

Thigh meat sinew is tough and should be removed beforehand. Make a shallow 1 to 2 cm (0.4 to 0.8 in.) wide cut at a right angle into the sinew. Remove the sinew first when preparing bite-sized pieces.
