Directions
- Cut the chicken into two pieces at the joints, and rub with (A).
- Heat the olive oil in a pan, place the chicken in the pan skin-side down and brown. Turn over the chicken to brown both sides.
- Place the chicken, 2 cups of water, the wine vinegar and soy sauce in a pot, and heat it with the lid on. Once it comes to a boil, lower the heat and simmer for 20-30 minutes.
- Serve on plates sprinkled with chopped pieces of Italian parsley. Garnish with lemon if you wish.
