Remove sinew from the chicken, then season with the salt and white wine. Quickly boil to cook through, and diagonally slice into 2 cm (0.8 in.) thick pieces.

Slice the avocado in half and remove the pit. Cut up into 1 cm (0.4 in.) thick slices.

Dress (1) and (2) with the freshly squeezed lemon juice and (A).
Cooking Basics

Chicken tenders contain a sinew. Lay the tender down flat and rock a knife back and forth along the sinew to remove. Nowadays sinew-removed chicken tenders are widely available.




Cut the avocado lengthwise with a knife until contact is made with the pit. Without removing the knife, make a continuous slice around the pit until the knife meets the initial incision point. Twist the two halves to separate. Strike the pit with the base part of the knife blade strong enough so that it becomes embedded and remove the pit. Use your hands to gently peel away the skin.
